Vegan Stuffed Pepper Soup Recipe

 

Ingredients

For the Soup:

    • 2 tablespoons olive oil
    • 1 large onion, diced
    • 3 cloves garlic, minced
    • 3 large bell peppers (green, red, yellow), diced
    • 2 large carrots, diced
    • 2 celery stalks, diced
    • 1 cup lentils (green or brown), rinsed and drained
    • 1 can (15 oz) diced tomatoes
    • 1 can (15 oz) tomato sauce
    • 4 cups vegetable broth
    • 1 tablespoon soy sauce (or tamari for gluten-free)
    • 1 teaspoon smoked paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon ground cumin
    • Salt and black pepper to taste
    • 1 cup cooked brown rice or quinoa (optional for serving)
    • Optional: 1 package Beyond Meat, crumbled
