Crab and Shrimp Seafood Bisque

Ingredients

For the Seafood:

  • 1/2 pound shrimp, peeled, deveined, and roughly chopped
  • 1/2 pound lump crab meat (fresh, frozen, or canned)
  • 1 tablespoon butter
  • 1/2 teaspoon Old Bay seasoning
  • Salt and black pepper, to taste

For the Bisque:

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups seafood stock (or chicken stock)
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup dry white wine (optional, for depth of flavor)
  • 1/4 cup tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Optional Garnish:

  • Fresh parsley, chopped
  • Crusty bread or oyster crackers
