Ingredients

  • 2 pounds Yukon Gold or russet potatoes, peeled and thinly sliced (use a mandoline for uniform slices)
  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar
  • 3–4 sprigs fresh thyme (leaves only)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese (for extra flavor)
