Prepare the Dough
In a large mixing bowl, combine the yeast, lukewarm milk, yogurt, and sugar. Let it sit for 5 minutes until the yeast activates. Add the cinnamon, cardamom (if using), salt, and flour gradually, mixing until a rough dough forms. Knead in the softened butter until the dough is smooth and elastic. Cover and let it rise in a warm place for 1–1.5 hours until doubled in size.
Prepare the Filling
Mix the grated apples with brown sugar and cinnamon in a bowl. Set aside.
Assemble the Rolls
Roll out the dough on a floured surface into a large rectangle, about 1 cm thick. Spread the apple mixture evenly over the dough. Roll it tightly from one long side to form a log. Cut into 12–16 slices.
Bake
Place the rolls on a lined baking tray or in a greased baking dish, leaving some space between them. Let them rise for another 15 minutes. Preheat the oven to 200°C (392°F). Bake for 15–20 minutes until golden brown.
Serve
Cool slightly before serving. Optional: Sprinkle with pearl sugar or almonds before baking, or drizzle with icing after cooling.
