Crispy Balsamic-Thyme Potato Torte

Ingredients
- 2 pounds Yukon Gold or russet potatoes, peeled and thinly sliced (use a mandoline for uniform slices)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 2 tablespoons balsamic vinegar
- 3–4 sprigs fresh thyme (leaves only)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1/4 cup grated Parmesan cheese (for extra flavor)
