Slowly drizzle the oil into the blender in a steady stream, allowing the mixture to emulsify and thicken into a creamy consistency.
Once the mixture is creamy, add the parsley, scallions, garlic, lemon juice, and salt.
Blend for an additional 15 minuts or until fully combined and smooth.
Turn off the blender, check the consistency of the mayonnaise, and adjust seasoning if needed.
