Step-by-Step Method
1. Prepare the Dough
- In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Add the egg and mix until well incorporated.
- Gradually sift in the flour and baking powder, mixing continuously to form a smooth dough.
- Add the lemon zest and mix until evenly distributed. For an extra lemony kick, you can also add 1 tablespoon of limoncello (optional).
2. Chill the Dough
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes to firm up. This makes it easier to handle and shape.
3. Shape the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Remove the dough from the refrigerator and form small, slightly flattened balls with your hands.
- Place the balls on the prepared baking sheet, leaving a little space between each.
4. Bake the Cookies
- Bake in the preheated oven for about 15 minutes, or until the cookies turn a light golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
5. Add the Finishing Touch
- Once the cookies are completely cool, dust them generously with powdered sugar for an elegant finish.
