- 3 small (5 ounces) yellow onions, divided
- 1 cup olive oil, divided
- 4 garlic cloves, minced (about 1 1/2 tablespoons), divided
- 1 teaspoon kosher salt, divided, plus more to taste
- 2 (15-ounce) cans dark red kidney beans, drained and rinsed
- 1 (28-ounce) can fire-roasted crushed tomatoes
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 3 tablespoons fresh lime juice (from 2 limes)
- 1/4 teaspoon black pepper, plus more to taste
