  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup diced cooked chicken or turkey (or use cooked vegetables or meat alternative of choice)
  • 1 cup diced potatoes, cooked until tender
  • 1 cup frozen peas or mixed vegetables, thawed
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese (optional)

Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon water


  1. Make the Dough:
    • In a large bowl, whisk together the flour and salt. Add the cold cubed butter.
    • Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
    • Gradually add the cold water, mixing until the dough comes together. Shape the dough into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another 1 minute.
    • Stir in the diced chicken (or other protein), cooked potatoes, and thawed peas or mixed vegetables.
    • Pour in the chicken or vegetable broth and add the dried thyme. Season with salt and pepper to taste. Cook for a few minutes until the mixture is heated through and slightly thickened.
    • Remove from heat and let the filling cool slightly. Stir in the shredded cheddar cheese if using.
  3. Assemble the Hand Pies:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles of dough.
    • Place a spoonful of the cooled filling onto one half of each dough circle, leaving a small border around the edge.
    • Fold the dough over the filling to create a half-moon shape. Use a fork to crimp the edges together to seal. Repeat with the remaining dough and filling.
    • Place the assembled hand pies on the prepared baking sheet.
  4. Bake the Hand Pies:
    • In a small bowl, whisk together the beaten egg and water to make the egg wash.
    • Brush the tops of the hand pies with the egg wash.
    • Using a sharp knife, make a small slit on the top of each hand pie to allow steam to escape during baking.
    • Bake in the preheated oven for 20-25 minutes or until the hand pies are golden brown and crispy.
