Instructions:

Start by preparing the peppers. Cut off the tops of the green peppers and remove the seeds and membranes from the inside. Set them aside.
Finely chop the onion, carrots, garlic, and cauliflower. Alternatively, you can use a food processor to grate the veggies. Set aside.
In a mixing bowl, combine the ground meat (optional: brown before this step), onion, carrots, garlic, cauliflower, tomato paste, dry oregano, dry or fresh tarragon, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.
Stuff each green pepper with the meat and vegetable mixture, packing it tightly. If you have leftover mixture, feel free to put it in between the peppers.
Place the stuffed peppers in the slow cooker. If there is any remaining filling, you can place it around the peppers. Add 1/2 cup of water (adjust if adding more peppers)>
Cover the slow cooker and cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours. The peppers should become tender and the flavors will meld together. Optional: If preferred, 30 mins before cooking time is up, top with your favorite shredded cheese.
Once the cooking time is complete, carefully remove the stuffed peppers from the slow cooker using tongs or a slotted spoon.
