METHOD
1. Place the kitchen foil on a baking tray and arrange the potatoes. Sprinkle with extra virgin olive oil and close with another sheet of kitchen foil. Bake in oven at 180°C/360°F for 35 minutes.
2. When the potatoes are done and soft enough remove them from the oven. Cut the top part and remove the inner part with the help of the teaspoon (be careful to not remove the bottom part).
3. Transfer potatoes to the baking tray covered with parchment paper and fill with cheese and speck. Add the egg on top of each potato and add some cheese on top.
4. Bake the potatoes in the oven at 180°C/360°F for 25 minutes. Serve them all together on a serving plate after baking.
