The Best Polish Mushroom Soup

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 1 medium parsnip, diced (optional but traditional)
  • 1 pound fresh mushrooms (white button, cremini, or wild mushrooms), sliced
  • 1 ounce dried porcini mushrooms, soaked in hot water
  • 6 cups chicken or vegetable broth
  • 1 cup sour cream (or heavy cream)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried marjoram
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tablespoons fresh dill or parsley, chopped (for garnish)

Optional Additions:

  • 1 cup cooked egg noodles (or diced potatoes for a heartier soup)
  • 1 teaspoon soy sauce (for extra umami flavor)
