The Best Polish Mushroom Soup

Ingredients
- 2 tablespoons butter
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 2 medium carrots, diced
- 1 medium parsnip, diced (optional but traditional)
- 1 pound fresh mushrooms (white button, cremini, or wild mushrooms), sliced
- 1 ounce dried porcini mushrooms, soaked in hot water
- 6 cups chicken or vegetable broth
- 1 cup sour cream (or heavy cream)
- 2 tablespoons all-purpose flour
- 1 teaspoon dried marjoram
- 2 bay leaves
- Salt and black pepper, to taste
- 2 tablespoons fresh dill or parsley, chopped (for garnish)
Optional Additions:
- 1 cup cooked egg noodles (or diced potatoes for a heartier soup)
- 1 teaspoon soy sauce (for extra umami flavor)
