Vegan Stuffed Pepper Soup Recipe
Ingredients
For the Soup:

- 1 large onion, diced
- 3 cloves garlic, minced
- 3 large bell peppers (green, red, yellow), diced
- 2 large carrots, diced
- 2 celery stalks, diced
- 1 cup lentils (green or brown), rinsed and drained
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups vegetable broth
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
- 1 cup cooked brown rice or quinoa (optional for serving)
- Optional: 1 package Beyond Meat, crumbled
