Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning (adjust to taste)
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons freshly squeezed lemon juice
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- Preheat your oven to 400°F (200°C). Grease a baking dish lightly with olive oil or non-stick cooking spray.
- In a mixing bowl, combine olive oil, minced garlic, Cajun seasoning, paprika, thyme, oregano, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
- Add the shrimp to the bowl with the marinade. Toss the shrimp until they are evenly coated with the seasoning mixture.
- Arrange the seasoned shrimp in a single layer in the prepared baking dish.
- Drizzle the freshly squeezed lemon juice over the shrimp.
- Bake in the preheated oven for about 10-12 minutes, or until the shrimp are pink and cooked through. Be careful not to overcook, as shrimp can become rubbery.
- Once done, remove from the oven and garnish with chopped fresh parsley.
- Serve the baked Cajun shrimp hot, with lemon wedges on the side for squeezing over the shrimp if desired.
