Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup freshly squeezed orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon grated orange zest
  • 1 1/2 cups fresh or frozen cranberries (if using frozen, do not thaw)

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed orange juice
  • Additional orange zest (optional, for garnish)

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together the orange juice, vegetable oil, egg, and grated orange zest until well combined.
  4. Combine Wet and Dry Mixtures:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Fold in Cranberries:
    • Gently fold in the cranberries until evenly distributed throughout the batter.
  6. Bake the Bread:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the Bread:
    • Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.
  8. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar and 2-3 tablespoons of orange juice until smooth and pourable. Adjust the consistency by adding more juice or sugar as needed.
  9. Glaze the Bread:
    • Once the bread has cooled completely, drizzle the glaze over the top of the bread. Sprinkle additional orange zest on top for garnish if desired.
  10. Serve:
    • Allow the glaze to set for a few minutes before slicing the bread. Serve slices of cranberry orange bread and enjoy!

This Cranberry Orange Bread is perfect for breakfast, brunch, or as a delightful snack any time of the day. The combination of flavors is sure to be a hit with family and friends!
