Italian Drunken Noodles, also known as “Drunken Spaghetti,” is a flavorful and comforting Italian dish that features pasta cooked in a rich and savory sauce infused with wine. Here’s a recipe to make this delicious dish:

Ingredients:

  • 12 ounces spaghetti or any pasta of your choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced mushrooms (optional)
  • 1/2 cup white wine (such as Pinot Grigio or Chardonnay)
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup heavy cream (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onion, and sauté until softened and fragrant, about 2-3 minutes.
  3. Add the sliced bell peppers and cherry tomatoes to the skillet. If using mushrooms, add them as well. Cook for another 4-5 minutes until the vegetables are slightly tender.
  4. Pour in the white wine and chicken or vegetable broth. Bring the mixture to a simmer and let it cook for 5-7 minutes to reduce slightly.
  5. Stir in the heavy cream (if using), dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  6. Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated with the sauce.
  7. Remove the skillet from the heat and transfer the Italian Drunken Noodles to serving plates.
  8. Garnish with grated Parmesan cheese and chopped fresh parsley.
  9. Serve hot and enjoy this flavorful and comforting Italian dish!

Italian Drunken Noodles are perfect for a cozy dinner at home or for entertaining guests with a taste of Italy’s culinary delights. Buon appetite!
