  • 1 lb ground beef (you can also use ground turkey or chicken)
  • 1/2 cup breadcrumbs

  • 1/4 cup milk
  • 1/4 cup ketchup (plus extra for topping)
  • 1 large egg
  • 1 small onion, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray


  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, ketchup, egg, chopped onion, garlic powder, oregano, salt, and pepper. Use your hands or a spoon to mix everything together until well combined.
  3. Divide the meat mixture evenly among the 12 muffin cups, pressing the mixture down slightly into each cup.
  4. Brush the tops of each mini meatloaf muffin with a little extra ketchup.
  5. Bake in the preheated oven for about 20-25 minutes or until the meatloaf muffins are cooked through and browned on top.
  6. Allow the mini meatloaf muffins to cool slightly before removing them from the muffin tin. Use a knife or spatula to carefully lift them out.
