Mixed berry cobbler is a delicious dessert made with a layer of sweetened mixed berries topped with a biscuit-like dough that bakes into a golden crust. Here’s a simple recipe to make a mixed berry cobbler:

Ingredients:

For the Berry Filling:

  • 4 cups mixed berries (such as strawberries, blueberries, blackberries, raspberries)
  • 1/2 cup granulated sugar (adjust according to sweetness of berries)
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/3 cup milk (whole milk or buttermilk)

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a baking dish (8×8 inch or similar size) with butter or cooking spray.
  2. In a large bowl, combine the mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently until the berries are coated evenly. Pour this mixture into the prepared baking dish, spreading it out evenly.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt for the cobbler topping. Add the cold butter pieces to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix; the dough should be slightly sticky.
  5. Drop spoonfuls of the cobbler dough evenly over the berry mixture in the baking dish, covering as much of the berries as possible.
  6. Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the cobbler topping is golden brown and the berry filling is bubbly around the edges.
  7. Remove the cobbler from the oven and let it cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.

Enjoy your delicious mixed berry cobbler! Adjust the sweetness and choice of berries according to your preference for a personalized treat.
