Old-fashioned potato candy is a classic treat that’s been enjoyed for generations. Here’s a simple recipe to make it:


  • 1 medium potato, boiled and mashed
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 4 cups powdered sugar (plus extra for rolling)
  • Peanut butter (smooth or crunchy)


  1. Start by boiling the potato until it’s soft. Then peel and mash it until there are no lumps.
  2. Mix in the vanilla extract and a pinch of salt with the mashed potato.
  3. Gradually add powdered sugar to the mashed potato mixture, about 1 cup at a time, until you have a dough-like consistency. You may need to adjust the amount of powdered sugar depending on the moisture content of the potato.
  4. Sprinkle some powdered sugar on a clean surface and roll out the potato dough into a rectangle, about 1/4 inch thick.
  5. Spread a layer of peanut butter evenly over the rolled-out dough.
  6. Carefully roll up the dough into a log, starting from one of the longer sides.
  7. Wrap the rolled-up candy in plastic wrap and refrigerate for at least an hour to firm up.
  8. Once chilled, unwrap the candy and slice it into rounds.
  9. Serve and enjoy! Store any leftovers in an airtight container in the refrigerator.
