Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons freshly squeezed lemon juice
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a baking dish lightly with olive oil or non-stick cooking spray.
  2. In a mixing bowl, combine olive oil, minced garlic, Cajun seasoning, paprika, thyme, oregano, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
  3. Add the shrimp to the bowl with the marinade. Toss the shrimp until they are evenly coated with the seasoning mixture.
  4. Arrange the seasoned shrimp in a single layer in the prepared baking dish.
  5. Drizzle the freshly squeezed lemon juice over the shrimp.
  6. Bake in the preheated oven for about 10-12 minutes, or until the shrimp are pink and cooked through. Be careful not to overcook, as shrimp can become rubbery.
  7. Once done, remove from the oven and garnish with chopped fresh parsley.
  8. Serve the baked Cajun shrimp hot, with lemon wedges on the side for squeezing over the shrimp if desired.
