Chicken Madeira is a popular dish featuring tender chicken breasts cooked in a rich Madeira wine sauce. Here’s a recipe for Chicken Madeira:

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter

For the Madeira Sauce:

  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 2 tablespoons heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Preheat your oven to 200°F (93°C) to keep the chicken warm while you make the sauce.
  2. Season the chicken breasts with salt and pepper on both sides. Dredge each chicken breast in flour, shaking off any excess.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and transfer it to an oven-safe dish. Place it in the preheated oven to keep warm.
  4. In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced mushrooms and minced garlic to the skillet and cook until the mushrooms are tender about 5 minutes.
  5. Sprinkle 1 tablespoon of flour over the mushrooms and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  6. Slowly pour in the Madeira wine and chicken broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until the sauce has thickened slightly about 5-7 minutes.
  7. Stir in the heavy cream and season the sauce with salt and pepper to taste. Let the sauce simmer for an additional 2-3 minutes.
  8. Remove the chicken breasts from the oven and place them back into the skillet with the sauce. Spoon some of the sauce over the chicken breasts.
  9. Garnish with chopped parsley, if desired, and serve the Chicken Madeira hot with your favorite side dishes.
