Chocolate Peppermint Bark

Ingredients:

  • 12 ounces (about 2 cups) semi-sweet chocolate chips
  • 12 ounces (about 2 cups) white chocolate chips
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed candy canes or peppermint candies

Optional toppings:

  • Drizzle of melted dark chocolate
  • Additional crushed candy canes

Instructions:

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a microwave-safe bowl, melt the semi-sweet chocolate chips in the microwave in 30-second intervals, stirring after each interval, until smooth and fully melted.
  3. Stir in half of the peppermint extract into the melted semi-sweet chocolate.
  4. Pour the melted semi-sweet chocolate onto the prepared baking sheet, spreading it out evenly into a thin layer using a spatula.
  5. Place the baking sheet in the refrigerator to allow the semi-sweet chocolate layer to set for about 15-20 minutes.
  6. While the semi-sweet chocolate layer is setting, melt the white chocolate chips in the microwave in 30-second intervals, stirring after each interval, until smooth and fully melted.
  7. Stir in the remaining half of the peppermint extract into the melted white chocolate.
  8. Remove the baking sheet from the refrigerator and pour the melted white chocolate over the semi-sweet chocolate layer, spreading it out evenly with a spatula.
  9. Immediately sprinkle the crushed candy canes over the melted white chocolate layer, pressing them lightly into the chocolate.
  10. If desired, drizzle melted dark chocolate over the top of the peppermint bark for added decoration.
  11. Return the baking sheet to the refrigerator and chill the peppermint bark until completely firm, about 1 hour.
  12. Once the peppermint bark has set, break it into pieces of your desired size.
  13. Store the peppermint bark in an airtight container in the refrigerator until ready to serve.
