Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for about 1 minute, or until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream, Dijon mustard, and whole-grain mustard. Cook for another 2-3 minutes, or until the sauce has thickened slightly.
  6. Return the chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for an additional 2-3 minutes to heat the chicken through and allow the flavors to meld.
  7. Garnish with chopped fresh parsley before serving.
  8. Serve the creamy French mustard chicken hot, with additional sauce spooned over the top if desired.

This creamy French mustard chicken pairs wonderfully with mashed potatoes, rice, or crusty bread to soak up the delicious sauce. Enjoy!
