As Southerners, we grew up with stewed potatoes as more than simply a side dish; they were a mainstay, appearing often on our menus. They still represent the best of Southern hospitality and food culture, and they make people long for simpler times. Stewn potatoes have been around for a long time since they sprang from the inventive rural Southern cuisine that used whatever was available. With its delicate potatoes cooked in a flavorful broth and accented with the perfect combination of herbs and spices, this dish provides a comforting and soul-stirring dinner.

Serving Suggestions: Round off this simple dish with some traditional Southern sides for a real treat. The sweet and flaky cornbread goes wonderfully with the hearty flavorful stew. Stewn collard greens with bacon or smoked ham hocks provide a subtle hint of greens and a smokiness that cuts through the richness. If you’re looking for a refreshing accompaniment to go with the thick stewed potatoes, try a crisp, fresh salad with a tart vinaigrette.

Creamy Garlic Potatoes Skillet

Ingredients:

  • 1.5 lbs (about 680g) Yukon Gold potatoes, washed and sliced into 1/4-inch rounds
  • 4 cloves garlic, minced
  • 1 cup (240ml) chicken or vegetable broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (60g) grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Potatoes:
    • Wash the potatoes and slice them into 1/4-inch rounds. You can peel them if desired, but leaving the skin on adds texture and flavor.
  3. Sauté Garlic:
    • Heat olive oil and butter in a large oven-safe skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add Potatoes:
    • Add the sliced potatoes to the skillet, arranging them in an even layer. Season with salt, black pepper, and dried thyme.
  5. Add Liquid:
    • Pour chicken or vegetable broth over the potatoes. Bring to a simmer, then reduce the heat to low and cover the skillet. Let the potatoes cook for about 8-10 minutes, or until they are fork-tender.
  6. Add Cream and Cheese:
    • Once the potatoes are cooked, pour heavy cream over them and sprinkle grated Parmesan cheese evenly on top.
  7. Bake:
    • Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the sauce is bubbly and the cheese is melted and golden brown.
  8. Garnish and Serve:
    • Remove the skillet from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley if desired.
    • Serve the creamy garlic potatoes hot as a delicious side dish or as a main course. Enjoy!

This creamy garlic potato skillet is rich, comforting, and bursting with flavor from the garlic, thyme, and Parmesan cheese. It’s perfect for cozy family dinners or special occasions.
