Making vegan butter at home is a rewarding and sustainable alternative to store-bought options. Here’s a straightforward recipe to create your delicious vegan butter:

Ingredients:

  • 1 cup refined coconut oil (solid, not melted)
  • 1/2 cup unsweetened soy milk or almond milk
  • 1/4 cup refined avocado oil or light olive oil
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1/2 teaspoon salt, or to taste
  • Optional: 1/4 teaspoon turmeric (for color)

Instructions:

  1. Prepare Ingredients:
    • Make sure the coconut oil is solid at room temperature. If it’s too soft or melted, chill it in the refrigerator until solid.
    • Measure out the soy milk (or almond milk), avocado oil (or light olive oil), apple cider vinegar (or lemon juice), salt, and turmeric (if using).
  2. Blend Ingredients:
    • In a blender or food processor, combine the soy milk (or almond milk), avocado oil (or light olive oil), apple cider vinegar (or lemon juice), salt, and turmeric (if using).
    • Blend on high speed until well combined.
  3. Add Coconut Oil:
    • Add the solid coconut oil to the blender.
    • Blend on high speed until the mixture is smooth and creamy, and the coconut oil is fully incorporated. Scrape down the sides of the blender as needed.
  4. Transfer and Set:
    • Pour the blended mixture into a container or silicone mold of your choice.
    • Smooth out the top with a spatula.
  5. Chill and Solidify:
    • Place the container in the refrigerator for at least 4 hours, or until the vegan butter is solid and spreadable.
  6. Store and Use:
    • Once solidified, store the vegan butter in an airtight container in the refrigerator.
    • Use it as a spread on toast, for baking, or in cooking just like regular butter.

Notes:

  • Refined Oils: It’s important to use refined coconut oil and avocado oil (or light olive oil) for a neutral flavor and smoother texture.
  • Consistency: The vegan butter will soften at room temperature and melt easily, similar to regular butter. Keep it refrigerated during warmer months to maintain its solidity.
  • Customization: Feel free to customize the flavor by adding herbs, spices, or garlic powder to suit your taste preferences.

By making your vegan butter at home, you can control the ingredients and create a healthier, dairy-free alternative perfect for spreading, cooking, and baking. Enjoy experimenting with this recipe and incorporating your homemade vegan butter into various dishes!
