Instructions:

  1. Prepare the Filling:
    • Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
    • Add minced garlic, grated carrot, and grated zucchini to the skillet. Cook for another 3-4 minutes until the vegetables are softened.
    • Stir in dried thyme, sage, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant. Remove from heat and let cool slightly.
  2. Make the Sausage Mixture:
    • In a food processor, combine the cooked vegetable mixture, chickpeas, breadcrumbs, parsley, soy sauce, and tomato paste. Pulse until well combined but still slightly chunky.
  3. Assemble the Rolls:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Roll out the vegan puff pastry on a lightly floured surface into a rectangle. Cut the pastry into two long rectangles.
    • Divide the sausage mixture into two portions. Place one portion along the center of each pastry rectangle, shaping it into a long sausage shape.
    • Fold one side of the pastry over the sausage mixture, then fold over the other side, slightly overlapping to enclose the filling. Press the edges together to seal. Repeat with the other pastry rectangle and sausage mixture.
