A Lemon Blueberry Loaf is a delightful treat, perfect for enjoying with a cup of tea or coffee. Here’s a classic recipe to create a moist and flavorful lemon blueberry loaf:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/2 cup plain Greek yogurt (or sour cream)
  • 1 cup fresh blueberries (you can also use frozen, but do not thaw)

Lemon Glaze (optional):

  • 1/2 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions:

  1. Preheat the Oven and Prepare the Loaf Pan:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add Eggs and Flavorings:
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
  5. Incorporate Dry and Wet Ingredients:
    • Gradually add the dry flour mixture into the wet ingredients, alternating with the Greek yogurt (or sour cream), beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  6. Fold in Blueberries:
    • Gently fold the fresh blueberries into the batter, being careful not to crush them.
  7. Bake the Loaf:
    • Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Glaze (if desired):
    • Allow the loaf to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely.
    • For the optional lemon glaze: In a small bowl, whisk together powdered sugar and enough lemon juice to make a smooth glaze. Drizzle the glaze over the cooled loaf.
  9. Slice and Serve:
    • Once the glaze has set (if using), slice the lemon blueberry loaf and serve. Enjoy!

This lemon blueberry loaf is bursting with bright citrus flavor from the lemon zest and juice, complemented by juicy bursts of blueberries throughout. It’s a wonderful recipe to bake and share with family and friends.
