1/4 cup unsweetened cocoa powder
1/4 cup milk (dairy or non-dairy)
2 cups old-fashioned oats
1 cup smooth peanut butter
1/2 cup honey or maple syrup
1 teaspoon pure vanilla extract
1/2 cup chocolate chips (optional)
1/4 cup chopped nuts (optional)
Additional toppings like shredded coconut or colorful sprinkles (optional)



In a large mixing bowl, combine the old-fashioned oats, smooth peanut butter, honey or maple syrup, unsweetened cocoa powder, milk, and pure vanilla extract. Stir until well blended and smooth.
If desired, fold in chocolate chips and chopped nuts until evenly distributed throughout the mixture.
Line a round cake pan or pie dish with parchment paper. Transfer the mixture into the pan, pressing it firmly and smoothing the top with a spatula.
Place the cookie cake in the refrigerator to chill for at least 1-2 hours until it’s set and firm.
Once chilled, carefully lift the cookie cake out of the pan using the parchment paper. Transfer it onto a serving plate.
Sprinkle additional toppings like shredded coconut or colorful sprinkles over the top of the cookie cake for a festive touch.
