Why We Love Easy No-Bake Strawberry Cheesecake 

This no-bake strawberry cheesecake dessert is loved by all (confession: I have gobbled up my fair share). Not to mention, it’s always a potluck favorite.  Whenever a pan of this creamy delight shows up at any event, it disappears in a flash.

With just a few easy ingredients you can make this dessert in no time at all.  It’s basically just mixing a few items and layering them over a cookie crust.  The hardest part is waiting several hours to let it chill.

This fabulous no-bake cheesecake is sometimes referred to as a Lush Dessert, Delight, or Dessert Lasagna it’s a quick and easy dish that will continue to delight new generations. It’s the perfect amount of sweet, creamy, and fluffy with a little crunch and plenty of fresh strawberries and raspberries. Whatever you call it, call it delicious.

Ingredients

  •  1 package (14.3 oz) Golden Oreos
  •  4 tablespoons butter, melted
  •  8 ounces cream cheese, softened
  •  1 cup powdered sugar
  •  2 (8 ounce) containers Cool Whip, thawed and divided
  •  2 (3.4 ounce 4-1/2 cup serving) packages of Jello Cheesecake instant pudding and pie filling (use vanilla if you can’t find cheesecake)
  •  3 cups milk
  •  1 teaspoon vanilla
  •  4 cups sliced strawberries and raspberries

Instructions

  1. Crush Oreos to fine crumbs using a food processor (or blender), or place cookies in a resealable plastic bag and crush using a rolling pin, glass, or mallet.
  2. Combine the cookie crumbs and melted butter in a 9×13 baking dish. Press the crust into the bottom of the dish and set aside.
  3. In a large bowl, add the pudding and milk together and whisk for 3 to 5 minutes. Place the mixture in the refrigerator to set up slightly.
  4. In a medium bowl, use an electric mixer to beat the cream cheese, powdered sugar, and vanilla together until smooth. Then, evenly spread the cream cheese mixture over the cookie crust.
  5. Remove the chilled pudding from refrigerator and fold in one of the 8-ounce containers of Cool Whip. Spread the mixture over the cream cheese layer.
  6. Layer most of the berries over pudding (leaving some to garnish with), spread the remaining 8-ounce container of Cool Whip over berries.
  7. Cover the dish and place in the refrigerator at least 2-4 hours to chill before serving. Just before serving, top with remaining fresh berries. Cut into squares and serve. Store in refrigerator.

Notes

To make a lighter version use fat-free cream cheese, light cool whip, sugar-free pudding and 1% or skim milk.
