Woolworth Icebox Cheesecake—No Bake, of Course! 

Woolworths’ famous lunch counter is probably already well-known to many of you. The Icebox Cheesecake is a Woolworths trademark. We are grateful to have rescued this neglected masterpiece and brought it back to life. A simple and delightful no-bake lemon dessert, Woolworth Icebox Cheesecake is ideal for those last moments when you’re craving something light and invigorating.

Ingredients:

For the crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the filling:

  • 16 ounces (2 packages) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping (such as Cool Whip), thawed

For the topping (optional):

  • Canned fruit pie filling (such as cherry, blueberry, or strawberry)

Instructions:

For the crust:

  1. In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand and holds together when pressed.
  2. Press the crumb mixture into the bottom of a 9×13-inch baking dish or a 9-inch springform pan to form an even layer. Use the back of a spoon or a flat-bottomed glass to firmly press the crumbs into place.
  3. Place the crust in the refrigerator to chill while you prepare the filling.

For the filling:

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Gradually add the powdered sugar and vanilla extract to the cream cheese, beating until well combined and smooth.
  3. Gently fold in the whipped topping until evenly incorporated into the cream cheese mixture.
  4. Spread the filling evenly over the chilled crust in the baking dish or springform pan.
  5. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set and firm up.

For serving:

  1. Once the cheesecake is set, remove it from the refrigerator.
  2. If desired, spread a layer of canned fruit pie filling over the top of the cheesecake just before serving. Cherry, blueberry, and strawberry are popular choices, but feel free to use your favorite flavor.
  3. Slice the cheesecake into squares if using a baking dish, or remove the sides of the springform pan if using one.
  4. Serve chilled and enjoy your no-bake Woolworth icebox cheesecake!
