Woolworth Icebox Cheesecake—No Bake, of Course!
Woolworths’ famous lunch counter is probably already well-known to many of you. The Icebox Cheesecake is a Woolworths trademark. We are grateful to have rescued this neglected masterpiece and brought it back to life. A simple and delightful no-bake lemon dessert, Woolworth Icebox Cheesecake is ideal for those last moments when you’re craving something light and invigorating.
Ingredients:
For the crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the filling:
- 16 ounces (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups whipped topping (such as Cool Whip), thawed
For the topping (optional):
- Canned fruit pie filling (such as cherry, blueberry, or strawberry)
Instructions:
For the crust:
- In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand and holds together when pressed.
- Press the crumb mixture into the bottom of a 9×13-inch baking dish or a 9-inch springform pan to form an even layer. Use the back of a spoon or a flat-bottomed glass to firmly press the crumbs into place.
- Place the crust in the refrigerator to chill while you prepare the filling.
For the filling:
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract to the cream cheese, beating until well combined and smooth.
- Gently fold in the whipped topping until evenly incorporated into the cream cheese mixture.
- Spread the filling evenly over the chilled crust in the baking dish or springform pan.
- Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set and firm up.
For serving:
- Once the cheesecake is set, remove it from the refrigerator.
- If desired, spread a layer of canned fruit pie filling over the top of the cheesecake just before serving. Cherry, blueberry, and strawberry are popular choices, but feel free to use your favorite flavor.
- Slice the cheesecake into squares if using a baking dish, or remove the sides of the springform pan if using one.
- Serve chilled and enjoy your no-bake Woolworth icebox cheesecake!
