Orange Loaf Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 1/4 cup plain yogurt or sour cream
  • 1 teaspoon vanilla extract

For the Orange Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed orange juice
  • Zest of 1 orange (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until well combined. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in the orange zest and plain yogurt or sour cream until evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  9. While the cake is baking, prepare the orange glaze. In a small bowl, whisk together the powdered sugar and freshly squeezed orange juice until smooth. Stir in the orange zest, if using.
  10. Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack placed over a baking sheet.
  11. While the cake is still warm, pour the orange glaze over the top, allowing it to drizzle down the sides of the cake.
  12. Allow the cake to cool completely before slicing and serving.
