Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup freshly squeezed orange juice
- Zest of 1 orange
- 1/4 cup plain yogurt or sour cream
- 1 teaspoon vanilla extract
For the Orange Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons freshly squeezed orange juice
- Zest of 1 orange (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, until well combined. Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in the orange zest and plain yogurt or sour cream until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- While the cake is baking, prepare the orange glaze. In a small bowl, whisk together the powdered sugar and freshly squeezed orange juice until smooth. Stir in the orange zest, if using.
- Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack placed over a baking sheet.
- While the cake is still warm, pour the orange glaze over the top, allowing it to drizzle down the sides of the cake.
- Allow the cake to cool completely before slicing and serving.
