Using a cake mix as the basis for a simple dessert dish is one of my favorites. No one would ever suspect that this pistachio cake begins with a cake mix and an instant pudding box because it is so easy to create.
Although I usually dislike cake mixes when baked according to the package directions, this particular cake is mouthwatering and luscious thanks to the addition of crushed pineapple and instant pudding mix.

Ingredients:
- 1 box (18.25 oz) yellow cake mix
- 1 package (3.4 oz) instant pistachio pudding mix
- 4 large eggs
- 1 cup vegetable oil
- 1 cup canned crushed pineapple, drained (reserve juice)
- 1 cup chopped pecans or walnuts
- 1 cup powdered sugar
- 2-3 tablespoons reserved pineapple juice
Instructions:
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Mix the Cake Batter: In a large mixing bowl, combine the yellow cake mix, instant pistachio pudding mix, eggs, and vegetable oil. Beat with an electric mixer on medium speed until smooth and well combined.
- Add Pineapple and Nuts: Fold in the drained crushed pineapple and chopped nuts using a spatula or spoon, ensuring they are evenly distributed throughout the batter.
- Bake: Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
