Using a cake mix as the basis for a simple dessert dish is one of my favorites. No one would ever suspect that this pistachio cake begins with a cake mix and an instant pudding box because it is so easy to create.

Although I usually dislike cake mixes when baked according to the package directions, this particular cake is mouthwatering and luscious thanks to the addition of crushed pineapple and instant pudding mix.

The flavors of pistachio pudding, crushed pineapple, and buttery yellow cake mix come together in this simple pineapple pistachio cake.


Here we present the pistachio pineapple cake! This tasty delicacy is not only simple to make, but it just takes a few minutes.


  • 1 box (18.25 oz) yellow cake mix
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 cup canned crushed pineapple, drained (reserve juice)
  • 1 cup chopped pecans or walnuts
  • 1 cup powdered sugar
  • 2-3 tablespoons reserved pineapple juice


  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix the Cake Batter: In a large mixing bowl, combine the yellow cake mix, instant pistachio pudding mix, eggs, and vegetable oil. Beat with an electric mixer on medium speed until smooth and well combined.
  3. Add Pineapple and Nuts: Fold in the drained crushed pineapple and chopped nuts using a spatula or spoon, ensuring they are evenly distributed throughout the batter.
  4. Bake: Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  5. Prepare Glaze: While the cake is baking, prepare the glaze. In a small bowl, mix together the powdered sugar and 2-3 tablespoons of reserved pineapple juice until smooth and pourable.
  6. Glaze the Cake: Once the cake is done baking, remove it from the oven and let it cool slightly in the pan for about 10 minutes. While still warm, poke holes all over the top of the cake using a fork or toothpick. Pour the pineapple glaze evenly over the warm cake, allowing it to soak in.
  7. Cool and Serve: Allow the cake to cool completely in the pan before slicing and serving. The flavors will develop even more as it sits. Enjoy your pineapple cake!
