Pumpkin lasagna is a delicious and comforting twist on the classic Italian dish, incorporating the warm and earthy flavors of pumpkin into the creamy layers of cheese and pasta. Here’s a recipe to create this delightful fall-inspired dish:

Ingredients:

For the pumpkin filling:

  • 2 cups canned pumpkin puree
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Salt and pepper to taste

For the cheese filling:

  • 2 cups whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Other ingredients:

  • 9 lasagna noodles, cooked according to package instructions
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Additional grated Parmesan cheese for topping
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a mixing bowl, combine all the ingredients for the pumpkin filling: canned pumpkin puree, ricotta cheese, grated Parmesan cheese, heavy cream, ground cinnamon, ground nutmeg, ground cloves, salt, and pepper. Mix until well combined. Set aside.
  3. In another mixing bowl, prepare the cheese filling by combining whole milk ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, chopped fresh parsley, salt, and pepper. Mix until smooth and well combined. Set aside.
  4. To assemble the lasagna, spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
  5. Place three cooked lasagna noodles over the marinara sauce, slightly overlapping.
  6. Spread half of the pumpkin filling evenly over the noodles.
  7. Layer half of the cheese filling over the pumpkin filling.
  8. Repeat the layers: marinara sauce, three lasagna noodles, remaining pumpkin filling, and remaining cheese filling.
  9. Finish with a layer of marinara sauce and sprinkle shredded mozzarella cheese and grated Parmesan cheese on top.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.
  12. Remove the pumpkin lasagna from the oven and let it cool for a few minutes before serving.
  13. Garnish with chopped fresh parsley before serving.
