  • 2 cups (250g) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 3/4 cup (180ml) warm water

  • 1 1/2 cups (150g) shredded cheese (mozzarella, cheddar, or a blend)
  • 1/4 cup (25g) crumbled feta cheese (optional)
  • 2 tablespoons chopped fresh herbs (such as parsley, cilantro, or green onions)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon black pepper

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, salt, sugar, and baking powder.
    • Add the olive oil and warm water, mixing until a soft dough forms.
    • Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rest for about 30 minutes.
  2. Prepare the Filling:
    • In a medium bowl, combine the shredded cheese, crumbled feta (if using), chopped herbs, garlic powder, and black pepper. Mix well.
  3. Assemble the Flatbreads:
    • Divide the dough into 6-8 equal portions and shape them into balls.
    • Roll out each ball into a small circle (about 6-7 inches in diameter) on a lightly floured surface.
    • Place a generous amount of the cheese filling in the center of each circle.
    • Fold the edges of the dough over the filling to form a pouch, pinching the edges to seal well.
    • Gently flatten the stuffed dough with your hands and then roll it out again carefully to form a flatbread about 1/4 inch thick.
  4. Cook the Flatbreads:
    • Heat a large skillet or griddle over medium heat and lightly grease it with oil or butter.
    • Place one flatbread on the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese inside is melted.
    • Repeat with the remaining flatbreads, adding more oil or butter to the skillet as needed.
  5. Serve:
    • Serve the stuffed flatbreads warm, with a side of yogurt, chutney, or your favorite dipping sauce.

  • Variations: You can add cooked spinach, caramelized onions, or other fillings of your choice along with the cheese.
  • Make Ahead: The dough can be made ahead and stored in the refrigerator for up to 24 hours. Let it come to room temperature before rolling out.
  • Freezing: Cooked flatbreads can be frozen and reheated in a skillet or oven for a quick snack or meal.
