Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillet on the prepared baking sheet. Season both sides of the salmon with salt, pepper, and a drizzle of olive oil. Roast in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Once cooked, remove from the oven and set aside.
  3. While the salmon is roasting, cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.
  4. In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for about 5-7 minutes, or until they are tender-crisp and lightly browned. Add minced garlic and sauté for another minute until fragrant.
  5. Pour in the chicken or vegetable broth and let it simmer for a couple of minutes to reduce slightly. Then, stir in the heavy cream (or half-and-half) and grated Parmesan cheese. Let the sauce simmer gently until the cheese melts and the sauce thickens slightly.
  6. Flake the roasted salmon into bite-sized pieces and add it to the skillet with the broccoli and sauce. Add lemon zest to the skillet and stir gently to combine all the ingredients. If the sauce seems too thick, you can add some of the reserved pasta cooking water to loosen it up.
