Strawberry Jello Cake is an insanely moist cake topped with homemade Strawberry Buttercream Frosting…Drool. 😉

JELLO cake is one of those cakes you just have to try- using  jello not only gives the cake an incredible flavor but it makes it so so moist!

I used a box mix with this recipe to keep it super easy but I made an incredible homemade strawberry buttercream frosting to top it with!

You can use any flavor jello to mix with cake mix- the possibilities are endless on all the different amazing flavors you can create! using a White cake mix pairs well with all flavors of jello.

This Cake Recipe Is Always A Crowd Favorite with everyone! It also makes a wonderful and easy dessert for your family or for a pot luck! 

 I’ve also done a lime and orange flavors before– which i will be adding to the blog with my homemade orange creamsicle frosting (check that one out- its already here on the blog)  and my lime frosting recipes!

INGREDIENTS  

  • 2 Cups fresh sliced strawberries
  • 1 Box white cake mix
  • 3 Large Eggs
  • 3/4 Cup vegetable oil
  • 1 3 oz box strawberry gelatin

STRAWBERRY BUTTERCREAM FROSTING-

  • 2 Cups fresh sliced strawberries
  • 1 Cup softened butter
  • 3-4 Cups powdered sugar
  • 1/2 tablespoon vanilla extract

INSTRUCTIONS

  • Preheat your oven to 350° and grease a 9 x 13 baking pan with butter.
  • In a large mixing bowl mix together your cake mix, eggs, oil, 1 cup of strawberries and your strawberry gelatin.
  • For your strawberry batter into your baking pan, bake for 30 minutes and let cool.
  • While your cake is cooling, make your frosting in a large mixing bowl by using a hand mixer to whip your butter.
  • Mash 1/3 cup strawberries and mix into your whipped butter with 1/2 tablespoon of vanilla extract.
  • Mix in your powdered sugar one cup at a time until you have the consistency you’d like.
  • Frost your cake with a spatula and place 9 strawberry halves onto the cake.
  • Enjoy!
