Ingredients:

  • 1 cup oats
  • 1 cup chopped nuts (such as almonds, walnuts, or pecans)
  • 1/2 cup shredded coconut
  • 1/2 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped dried fruit for added sweetness

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, combine the oats, chopped nuts, and shredded coconut.
  3. In a small saucepan, heat the honey (or maple syrup), peanut butter (or almond butter), and coconut oil over low heat. Stir until melted and well combined. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients in the mixing bowl. Stir until everything is evenly coated.
  5. If using, fold in the chocolate chips or dried fruit.
  6. Press the mixture firmly into the prepared baking dish, using the back of a spoon or your hands to flatten it out evenly.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool completely in the baking dish before cutting into bars.
  9. Once cooled, lift the bars out of the baking dish using the parchment paper overhang. Cut into squares or bars and enjoy!
