  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1/2 cup milk or heavy cream
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)


  1. Prepare the Vegetables:
    • Finely chop the onion and celery. Mince the garlic.
  2. Sauté the Aromatics:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the chopped onion and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and translucent.
    • Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  3. Make the Roux:
    • Sprinkle the flour over the sautéed vegetables, stirring continuously to create a roux. Cook for about 2 minutes to eliminate the raw flour taste.
  4. Add the Liquid:
    • Gradually whisk in the chicken or vegetable broth, ensuring there are no lumps.
    • Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce begins to thicken.
  5. Season the Sauce:
    • Stir in the milk or heavy cream for a richer sauce.
    • Add the dried sage and thyme. Season with salt and pepper to taste.
    • Continue to simmer the sauce for another 5-7 minutes, allowing the flavors to meld and the sauce to thicken to your desired consistency.
  6. Serve:
    • Pour the hot cornbread sauce over slices of cornbread or serve it on the side as a gravy.
    • Garnish with freshly chopped parsley if desired.
