  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 peaches, pitted and sliced
  • 1/2 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • Chopped fresh parsley, for garnish (optional)

Instructions:

1. Season the Pork Chops:

  • Season the pork chops generously with salt and pepper on both sides.

2. Sear the Pork Chops:

  • Heat the olive oil in a skillet over medium-high heat.
  • Sear the pork chops for 2-3 minutes on each side until they are golden brown. Transfer the pork chops to the slow cooker.

3. Prepare the Sauce:

  • In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until softened.
  • Add the sliced peaches to the skillet and cook for an additional 2-3 minutes until they start to caramelize.
  • Stir in the chicken broth, honey, Dijon mustard, apple cider vinegar, dried thyme, and ground cinnamon. Bring the mixture to a simmer and cook for 2-3 minutes, stirring occasionally.

4. Slow Cook:

  • Pour the peach mixture over the pork chops in the slow cooker.
  • Cover and cook on low heat for 4-6 hours, or until the pork chops are tender and cooked through.

5. Serve:

  • Once the pork chops are done, transfer them to a serving platter.
  • Spoon the peach sauce over the pork chops.
  • Garnish with chopped fresh parsley, if desired.
  • Serve the slow cooker pork chops with peaches with your favorite side dishes, such as mashed potatoes, rice, or steamed vegetables.

Notes:

  • If you prefer a thicker sauce, you can remove the pork chops from the slow cooker once they are done cooking and then simmer the sauce on the stovetop until it thickens to your desired consistency.
  • Feel free to adjust the seasonings and sweetness of the sauce according to your taste preferences.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Enjoy the sweet and savory flavor combination of slow cooker pork chops with peaches for a comforting and satisfying meal!
