  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil and set aside.
  2. Prepare Filling: In a mixing bowl, combine the shredded chicken, shredded cheese, chopped green onions, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well to combine.
  3. Assemble Taquitos: Warm the tortillas slightly to make them pliable (you can do this in the microwave wrapped in a damp paper towel). Place a spoonful of the chicken filling along the edge of a tortilla and roll it up tightly into a cigar shape. Place the taquito seam-side down on the prepared baking sheet.   4. Brush with Oil: Lightly brush or spray the taquitos with cooking spray or a bit of vegetable oil. This helps them crisp up in the oven.
  5. Bake: Bake the taquitos in the preheated oven for about 15-20 minutes, or until they are golden brown and crispy.
  6. Serve: Remove the taquitos from the oven and let them cool slightly. Serve them warm with your favorite dipping sauces like salsa, guacamole, sour cream, or chipotle mayo.
